

Litschau Castle
In Litschau - the northernmost town in Austria - 700 metres as the crow flies from the Czech border, Franziskus and Amelie Seilern-Aspang founded the "Schloss Litschau" brand in 2021. The aim: to create a product that is as pure as possible - without additives or preservatives. The game comes from the local forest around Litschau and the fish from the "Schlossfischerei Litschau" fish farm.


In 1763, the Counts of Seilern-Aspang gained control of the region and have been operating forestry and pond farming here ever since.
Franziskus Seilern-Aspang now runs "Schlossfischerei Litschau" together with his business partner, Markus Schlosser. A company that has set itself the goal of breeding and selling high-quality fish.
In the area of game specialities, the business has concentrated on raw sausages such as salami and Kaminwurzn. The result is a 100% pure game product, which means that the bacon is also from wild boar (if this is not possible, the bacon comes from an organic farm in the neighbouring village). The spices are sourced from the Austrian manufacturer "cook & grill", most of which are also certified organic.
The cornerstone of the business is above all the appreciation of the game hunted and the fish harvested. This is crucial for modern and humane hunting in Austria and should be a matter of course for every practising hunter. The "Schloss Litschau" farm therefore not only pays meticulous attention to compliance with the shooting and closed seasons, but also to the "right" shot - in other words, to spare the game physical suffering
Near-natural, ecological pond farming is practised on 136 hectares in 44 ponds. Healthy, resilient fish are reared on the farm. The way in which the fish are harvested, technically known as "fishing", has remained the same since the 16th century. The long retention of the special technique, which has remained almost identical for centuries, is not due to stagnation, but rather to perfection.
Fishing takes place in spring and autumn, when the water temperature is low enough to minimise the stress factor for the fish.
